The seemingly contradictory expression of “soft yet firm” can be explained as follows.
After boiling, the moisture content of the udon is over 80% near the surface, while the center part is 40~50%.
Therefore, when bitten, it feels soft, but afterward, there is a sense of firmness, which is said to be unique to Sanuki udon.
The boiling time is 15~18 minutes.
It has a refined whiteness and a refreshing taste.
A faint sweetness spreads in the mouth after a slight delay, which is a characteristic feature.
