ăOverview of Kikurageă Kikurage is often mistaken for salted jellyfish used in Chinese cuisine or a type of seaweed, but it is actually a mushroom. It grows across a wide range in North America, Europe, and East Asia. In Japan, it has been traditionally consumed as a mushroom that grows on the dead wood of broad-leaved trees and is known as “ear fungus” in some regions.
ăNutritionă Kikurage is rich in vitamin D, dietary fiber, and beta-glucan, and contains more calcium than other types of mushrooms.
ăPreparation Methodă Soak it in plenty of water to rehydrate. Change the water occasionally and wash thoroughly before use. Kikurage can also be stored in the freezer. Briefly boil it, drain the water, let it cool, then place it in a storage bag and freeze. When using, it can be added directly to soups or stir-fries without thawing.
ăRecommended Dishesă It can be used in stir-fries, salads, and soups. In stir-fries, simply rehydrate and quickly stir-fry for a textural accent that is sure to make a big impact. Additionally, adding it to salads and soups enhances the overall quality of the dish.
